Ecclefechan Butter Tart
Another delicious recipe from my cousin's recipe book, and my husband's favourite. Its Scottish and named after the town of Ecclefechan. Delicious warm with ice-cream and very easy to make.
Ingredients
Pastry
8oz plain flour
5oz butter
2oz caster sugar
1 egg plus 2 tsp water
Tart Mix
2 eggs - well beaten
6oz soft brown sugar
4oz butter - melted
2 tbsp white wine vinegar
8oz sultanas and currents mixed
2oz chopped walnuts
2oz glace cherries halved
Method
Make pastry and line a 8/9” loose bottomed tin. Mix all tart ingredients together and pour into pastry case. Bake @ 180’c for 35/40 mins till golden brown and set. Leave to cool.
